CARAMELISED SALMON FILLETS

Experience a perfect balance of smoky, sweet, and savoury. This recipe uses our bespoke Salmon Seasoning to create a delicious crust that seals in the juices of the fish, resulting in a flakey and tender finish.

Ingredients

  • 2 Fresh Salmon Fillets (approx 150 g each)
  • 1.5 tbsp Salmon Seasoning by Goodness In A Bowl (see Notes below to shop)
  • 1 tbsp Olive Oil

Serving suggestion: Wilted spinach and crushed new potatoes

Instructions

  • Season: Generously coat the flesh side of the salmon fillets with the Salmon Seasoning, pressing it down firmly so the herbs and spices adhere.
  • Sear: Heat the olive oil in a non-stick frying pan over medium-high heat. Place the salmon in the pan, seasoned-side down.
  • Caramelise: Cook for 3–4 minutes without moving the fillets. This allows the brown sugar and paprika to caramelise into a dark, flavourful crust.
  • Flip: Carefully turn the fillets over and cook for a further 3–4 minutes on the skin side until the fish is cooked through and flakes easily.
  • Serve: Squeeze a little fresh lemon over the top to cut through the sweetness.

Notes

This blend is perfect for salmon as it plays on the contrast between the sweetness of the sugar and the savouriness of the mustard and herbs. The brown sugar, in particular, helps to create that irresistible caramelised crust, while the herb infusion (basil, oregano, and thyme) adds a fresh, Mediterranean note.
