PAN-SEARED "RUBBED" SALMON FILLETS

Don't let the name fool you—this seasoning is spectacular on oily fish like salmon. A quick, 10-minute dinner.

Ingredients

  • 2 Salmon Fillets
  • 1 tbsp Chicken Seasoning by Goodness In A Bowl (see Notes below to shop)
  • 1 tbsp Olive Oil

Serving suggestion: Steamed tenderstem broccoli and quinoa

Instructions

  • Rub: Press the skinless side of the salmon fillets firmly into a plate covered with the Chicken Seasoning blend until well-coated.
  • Sear: Heat oil in a non-stick frying pan over medium heat. Place salmon in the pan, seasoned-side down.
  • Cook: Cook for 3–4 minutes on the seasoned side (watch the sugar doesn't burn!), then flip and cook for another 3 minutes on the skin side until cooked through.

Notes

The brown sugar in the Chicken Seasoning blend creates a "blackened" crust on the salmon that contrasts perfectly with the delicate pink fish inside.
