Wooden or metal skewers (soak wooden ones in water for 20 mins first)
Marinate: In a bowl, whisk the olive oil with the Lamb Seasoning. Add the halloumi, aubergine, and pepper chunks. Toss well and leave to marinate for at least 15 minutes.
Assemble: Thread the ingredients onto the skewers, alternating between cheese and vegetables.
Grill: Heat a griddle pan or BBQ to medium-high. Grill the skewers for 2–3 minutes per side, turning carefully, until the halloumi is golden-brown and the vegetables are tender.
Serve: Delicious served inside a warm flatbread with a squeeze of fresh lemon juice.
