Many of us have heard the warnings, but is it actually dangerous to reheat yesterday’s pilau or boiled rice? The short answer is: it’s not the reheating itself that’s the problem, but how the rice was stored.

The Science Bit: Bacillus Cereus
Uncooked rice often contains spores of Bacillus cereus, a bacterium that can cause food poisoning. These spores can survive even after the rice is cooked. If rice is left standing at room temperature for too long, these spores can grow into bacteria, which then multiply and produce toxins that cause illness.
The longer the rice is left at room temperature, the higher the risk. This is why cooling and storage are the most critical steps.

How to Serve and Store Rice Safely
To enjoy your leftovers without worry, follow these simple “Top Tips”:
Serve Immediately: Ideally, serve rice as soon as it has been cooked.
Cool it Fast: If you aren’t eating it straight away, cool the rice as quickly as possible (ideally within one hour). Spreading it out on a flat tray can help it cool faster.
Get it in the Fridge: Keep cooked rice in the fridge for no more than 24 hours before eating.
Check the Heat: When you do reheat rice, always check that it is piping hot all the way through.
One Time Only: Never reheat rice more than once.
