SMOKY MUSHROOM & PEPPER MEATLOAF

A hearty and comforting family favourite with a modern twist. The mushrooms keep the beef incredibly moist, while the peppers and our Burger Seasoning blend provide a rich, multi-layered flavour profile that is simply irresistible.

Ingredients
  

  • 750 g Beef Mince (or a mix of 500g beef and 250g pork for extra juiciness)
  • 3 tbsp Burger Seasoning by Goodness In A Bowl (see Notes below to shop)
  • 150 g Chestnut Mushrooms (very finely chopped, almost minced)
  • 1 Red Bell Pepper (finely diced)
  • 1 Large Onion (finely chopped)
  • 75 g Panko Breadcrumbs (or fresh breadcrumbs)
  • 1 Large Egg (beaten)
  • 2 tbsp Tomato Ketchup (for the glaze)
  • 1 tsp Worcestershire Sauce

Instructions
 

  • Sauté the Veg (Optional but recommended): For the best texture, lightly sauté the onions, peppers, and mushrooms in a little oil for 5 minutes until softened. Let them cool slightly. This ensures the peppers are tender and the mushrooms release their moisture into the meat.
  • The Mix: In a large mixing bowl, combine the mince, breadcrumbs, beaten egg, and 3 generous tablespoons of Burger Seasoning blend. Add the cooled vegetable mixture and the Worcestershire sauce.
  • Combine: Using your hands, gently mix everything until just combined. Tip: Do not over-mix, or the meatloaf will become dense.
  • Shape: Grease a standard loaf tin or shape the mixture into a free-form log on a baking tray lined with parchment paper.
  • Glaze & Bake: Brush the top with tomato ketchup (which caramelises beautifully with the brown sugar notes in your seasoning). Bake at 180°C (160°C fan) for 55–60 minutes.
  • Rest: This is the most important step! Let the meatloaf rest for 10–15 minutes before slicing. This allows the juices to redistribute so the slices stay intact and juicy.

Notes

Since the Burger Seasoning blend contains Garlic and Onion Powder, the mushrooms act as a sponge, soaking up those concentrated flavours and making the meatloaf taste like it has been simmering for hours.
The Crust: The Smoked Paprika and Mustard Powder in Burger Seasoning blend react with the meat juices to create a savoury “bark” on the outside of the loaf.
