BAKED SALMON & ASPARAGUS TRAYBAKE
A vibrant and nutritious weekday meal. The dried basil and oregano in the seasoning infuse both the salmon and the vegetables, creating a cohesive and aromatic dish with minimal clean-up.

Ingredients
- 2 Salmon Fillets
- 1 bunch Asparagus woody ends trimmed
- 150 g Cherry Tomatoes
- 2 tbsp Salmon Seasoning by Goodness In A Bowl (see Notes below to shop)
- 2 tbps Olive Oil extra virgin
Instructions
- Preheat your oven to 200°C (180°C fan). Line a baking tray with parchment paper
- Place the salmon, asparagus, and tomatoes on the tray. Drizzle with olive oil and sprinkle the Salmon Seasoning over everything. Toss the vegetables gently to coat them
- Arrange the salmon in the centre and roast for 10–12 minutes
- Finish: The tomatoes will have burst, creating a natural sauce that mingles with the garlic and mustard powder from your seasoning
