HERBY POTATO SALAD
Forget boring potato salads. By adding the Vegetable Seasoning to the dressing, the dried lemon peel and rosemary infuse the potatoes for a bright, zesty summer side dish.

Ingredients
- 500 g New Potatoes
- 3 tbsp Mayonnaise or Greek Yoghurt
- 1 tsp Dijon Mustard
- 1 tbsp Vegetable Seasoning by Goodness InA Bowl (see Notes below to shop)
Instructions
- Boil: Cook the potatoes in salted water until tender. Drain and let them cool slightly.
- Mix Dressing: In a small bowl, whisk the mayo, mustard, and Vegetable Seasoning. Let it sit for 5 minutes so the dried herbs and lemon peel can rehydrate in the dressing.
- Combine: Toss the warm potatoes in the dressing and serve.
