SPICED HALLOUMI & AUBERGINE SKEWERS

These quick-fire skewers are perfect for the grill or BBQ. The saltiness of the halloumi is perfectly balanced by the garlic, mint, and marjoram in the seasoning.

Ingredients
  

  • 250 g Halloumi Cheese (cut into 2cm cubes)
  • 1 Red Pepper (de-seeded and cut into squares)
  • 3 tbsp Olive Oil
  • 1.5 tbsp Lamb Seasoning by Goodness In A Bowl ((see Notes below to shop)
  • Flatbread
  • Fresh lemon Juice

Instructions
 

  • Wooden or metal skewers (soak wooden ones in water for 20 mins first)
  • Marinate: In a bowl, whisk the olive oil with the Lamb Seasoning. Add the halloumi, aubergine, and pepper chunks. Toss well and leave to marinate for at least 15 minutes.
  • Assemble: Thread the ingredients onto the skewers, alternating between cheese and vegetables.
  • Grill: Heat a griddle pan or BBQ to medium-high. Grill the skewers for 2–3 minutes per side, turning carefully, until the halloumi is golden-brown and the vegetables are tender.
  • Serve: Delicious served inside a warm flatbread with a squeeze of fresh lemon juice.
