SPICED HALLOUMI & AUBERGINE SKEWERS
These quick-fire skewers are perfect for the grill or BBQ. The saltiness of the halloumi is perfectly balanced by the garlic, mint, and marjoram in the seasoning.

Ingredients
- 250 g Halloumi Cheese (cut into 2cm cubes)
- 1 Red Pepper (de-seeded and cut into squares)
- 3 tbsp Olive Oil
- 1.5 tbsp Lamb Seasoning by Goodness In A Bowl ((see Notes below to shop)
- Flatbread
- Fresh lemon Juice
Instructions
- Wooden or metal skewers (soak wooden ones in water for 20 mins first)
- Marinate: In a bowl, whisk the olive oil with the Lamb Seasoning. Add the halloumi, aubergine, and pepper chunks. Toss well and leave to marinate for at least 15 minutes.
- Assemble: Thread the ingredients onto the skewers, alternating between cheese and vegetables.
- Grill: Heat a griddle pan or BBQ to medium-high. Grill the skewers for 2–3 minutes per side, turning carefully, until the halloumi is golden-brown and the vegetables are tender.
- Serve: Delicious served inside a warm flatbread with a squeeze of fresh lemon juice.
